Quinoa Oatmeal Chocolate Cookies

I'm totally excited about these cookies!  After more than one attempt, I think these are awesome!  They are light and slightly cakey.  Not too sweet and with enough good food ingredients that I feel pretty good about my family chowing down on these. 
Quinoa Oatmeal Chocolate Chip Cookies

¾ cup brown sugar

1 cup butter or margarine

4 beaten eggs

1 teaspoon vanilla

2 cups whole wheat flour

1 teaspoon baking powder

1 teaspoon cinnamon (optional)

½ teaspoon salt

½ teaspoon baking soda

1 cup cooked Quinoa

1 cup oats

1 cup…or more chocolate chips

Combine sugar and butter or margarine. Add beaten eggs and vanilla. Mix well.  Add flour, baking soda, baking powder, cinnamon (if you like) and salt.  Blend well after each ingredient.  Add cooled Quinoa and oats, mix well. Stir in chocolate chips.  Drop by spoonful onto prepared cookie sheet. Bake for 10 minutes at 350 degrees.  Enjoy!
