Baked Samosas

Baked not fried and vitually fat free.  Totally delicious with lots of flavor!  For some reason, even kids like these.

What you will need: 
3 cups  of peeled and cubed potatoes about 4 smallish potatoes
2 Tablespoons of your favorite oil to sauteé in
1/2 - 3/4 cup  diced onion
3 or 4 cloves of minced garlic
2 Tablespoons of minced  ginger root  or ginger pureé
1 teaspoon Cumin
1 teaspoon curry paste (or more)
1/2 teaspoon salt
4 cups chopped fresh spinach
1 cup thawed frozen peas
8 large tortillas


Yield: 14 - 16 samosas....depending on how much you stuff into them. 


What you need to do:
Filling:
First peel and cube the potatoes.  Rinse well to remove excess starch. Place in a small saucepan with and cover with water. Bring to a boil and then cover and let cook on medium heat for 10 minutes.
While the potatoes are cooking, add oil to a large saucepan. Sauteé onions and garlic on medium heat until they are soft and just beginning to brown.  Turn heat to low and add ginger.  Mix well.  Now add, cumin, curry and salt.  Mix very well.  Add chopped spinach and mix well so that the spinach is evenly coated with the spice mixture.  Add thawed peas. Mix well.  Add the cooked, well drained potatoes. Mix well.  Set aside off of the heat. Preheat oven to 400 degrees


Forming Samosas: 
Next take the tortillas and cut them down the middle in two halves.  Make samosas one at a time by slipping the 1/2 tortilla through a bowl of water.  Roll the tortilla into a cone, place a heaping tablespoon of filling into cone and fold the ends in to close.  Place on baking sheet that with parchment or lightly sprayed with oil.  Bake for 10 - 12 minutes.  


Serve with "sneaky tzaziki", tzaziki or alone.  These freeze wonderfully.  They warm up easily in the toaster oven and I even like them cold.

When you don't have or don't feel like making tzaziki....just add some yogurt or kefir to a creamy dill salad dressing.  It's awesome!  :D
